For gourmet seafood lovers, the Bartolotta Ristorante di Mare at the Wynn Las Vegas offers an exquisite Italian dining experience featuring fresh seafood that is flown in daily from Mediterranean waters. Chef Paul Bartolotta, winner of the 2009 James Beard Foundation award for Best Chef Southwest, uses sea bass, purple snapper, turbot and a host of other types of fish in many spectacular ways. Mostly he likes to roast them whole and serve them by weight, but the menu is also full of classic Italian fare.

Don’t forget to save room for dessert. Pastry chef Kriss Harvey specializes in light, irresistible delicacies too.

Dinner jackets and reservations recommended.
Open daily.
